Better known to the rest of the world as mango sticky rice, it’s a deceptively simple dish. And few have perfected that balance as well as 63-year-old Varee Jeensuwan, the undeniable queen of mango sticky rice in Bangkok. In 2022, she performed at the Coachella music festival in California and ended her show by digging into a bowl of mango sticky rice. K Panich has been dishing out mango sticky rice since 1932. According to R-Haan co-owner/chef Chumpol Jangprai, there’s evidence suggesting mango sticky rice has been around since Thailand’s late Ayutthaya period (1351-1767), with references to the dish found in the centuries to follow.

Whether you know it as Japanese kakigori, Korean patbingsu, Hawaiian shave ice, Italian granita, Indian ice gola or the American snow cone, a mound of shaved ice drenched in syrup and served on a hot day is a near-universal delight. Erickson serves kiwi-flavored shaved ice atop a creamy jasmine tea custard. At Bar Maze, which offers a cocktail-paired tasting menu in Honolulu, the head chef Ki Chung, 32, combines sweet corn pudding and sesame streusel with ice shaved from the same clear blocks used for drinks — the dessert is finished tableside with a pour of black sesame orgeat. For Srijith Gopinathan, 46, the chef and owner of Copra in San Francisco, shaved ice is infused with nostalgia. There is a certain irony to the fact that of all the shows that took place during couture last week, the one designed to be the most off-line — the one conceived as an in-person experience rather than as a simple catwalk — is the one that ended up going the most viral. The one that no one seems to be able to stop talking about — not the fashion world, nor its millions of followers. I am speaking of the Maison Margiela Artisanal show by John Galliano. It was sumptuous, excessive, rife with roiling emotion communicated in cloth, with models vamping, skittering and otherwise willing to sacrifice themselves on the pyre of unfettered imagination. It was the sort of immersive show that hasn’t been seen in more than a decade.

Alternatively called rum cake, fruit cake or great cake, this dessert most likely came to the Caribbean in the 18th century with English and Irish colonizers, who substituted local rum for whiskey in their traditional Christmas fruitcake. At some point, burnt sugar syrup was added, turning the cake almost black. It has been a West Indian holiday staple, as well as the go-to wedding cake, for centuries. The recipe for black cake is so storied it has even inspired a best-selling novel that has been adapted into a series on Hulu. Black cake baking is a cottage industry in the West Indies that continues among Caribbean immigrants worldwide.

But a more accessible route is to purchase a box of marrons glacés — a classic European sweet, also called candied chestnuts — from Giovanni Galli 1911, a longtime confectioner that still produces the seasonal delicacies by hand. Its nondescript white boxes with Galli’s name printed in the original turn-of-the-century typeface appear on smart dining tables here once fall arrives. And agonizingly slow-moving lines form outside the store throughout December, although online sales have helped a bit with that situation. (The season for marrons glacés lasts through Easter.)
